Peri-Peri Sardine Alfredo pasta

INGREDIENTS

  • 2 Tbsp butter
  • ½ white onion
  • 2 garlic cloves
  • 2 cups cream
  • 1 tsp salt
  • ½ tsp nutmeg
  • 1 cup grated Parmesan cheese
  • Cooked pasta

METHOD

  1. Medium heat pan add 2 Tbsp butter over medium heat and fry your onions until soft. Add garlic, sauté the mixture for a minute and then add a cup of cream while stirring.
  2. Add 1 Tbsp salt, ½ tsp black pepper and ½ tsp nutmeg. Allow the cream mixture to cook over medium heat for 4 minutes (Until you see gentle bubbles on the side of the pan)
  3. Do not bring it to full boil otherwise your sauce will split.
  4. Add ½ cup of grated parmesan cheese to the sauce (2 Tbsp at a time) and gently stir and then your peri peri sardines.
  5. Add the rest of the cheese, fold gently and add the peri peri brine in the mix and stir well.
  6. Add your pasta in batches so that they can get coated well in the sauce.
  7. Top your pasta with more Parmesan cheese, chopped parsley and enjoy.
