INGREDIENTS

  • ROOSTERKOEKE:
  • Cake wheat flour 6 cups (720 g)
  • Salt 2 tsp (10 ml)
  • Sugar 1 Tbsp (15 ml)
  • Instant dry yeast (10 g sachet) 1
  • Brown vinegar 2 Tbsp (30 ml)
  • Cooking oil 3 Tbsp (45 ml)
  • Lukewarm water 800 ml
  • FILLING:
  • Cooking oil 2 Tbsp (30 ml)
  • Medium onion, chopped 1
  • Lucky Star Pilchards in Tomato Sauce 2 cans (400 g each)
  • Salt 2 tsp (10 ml)
  • Sugar 2 Tbsp (30 ml)

METHOD

  1. ROOSTERKOEKE:
  2. In a large-sized mixing bowl, mix the flour, salt, sugar and instant yeast together.
  3. Make a hole in the middle of the mixture. In a separate medium bowl mix the vinegar, oil and lukewarm water together.
  4. Slowly add to the flour mixture and mix together, then knead for about 10 minutes to form a soft, pliable dough.
  5. Cover the dough with a plastic wrap and leave to rise until it doubles in size.
  6. Sprinkle flour on a tabletop and scoop out the dough.
  7. Divide the dough into 2 large balls. Make each ball into a long roll of about 50cm and cut into slices of about 7cm each.
  8. Press each slightly flat and put on coals.
  9. Turn frequently and cook until lightly browned also on the sides.
  10. FILLING:
  11. In a medium saucepan on medium heat, add cooking oil and onion, cook for about 5 minutes or until the onions are translucent.
  12. Add the fish, salt and sugar, and cook for further 5 minutes.
  13. Cool slightly and then spoon the fish mixture into the toasted roosterkoeke.
  14. SERVING SUGGESTION
  15. For a special touch add Lucky Star baked beans to the filling and enjoy!
