INGREDIENTS

  • Lucky Star Pilchards in Tomato Sauce 1 can (400 g)
  • Medium onion, chopped 1
  • Medium carrot, chopped 1
  • Medium tomatoes, chopped 2
  • Cooking oil 2 Tbsp (30 ml)
  • Pumpkin leaves, washed and shredded 1 handful
  • Large pumpkin, chopped 1
  • Peanuts, crushed or peanut butter 2 Tbsp (30 ml)
  • Salt and pepper to taste

METHOD

  1. In a medium saucepan, heat cooking oil and fry the onion for about 5 minutes or until translucent.
  2. Add the tomatoes and carrot, cook for about 10 - 15 minutes.
  3. Add the large pumpkin and shredded leaves to the onion mixture and cook until the pumpkin is soft, and the leaves slightly change colour and wilt down in size.
  4. Add the peanuts or peanut butter and cook for 5 more minutes.
  5. Then add the pilchards, salt and pepper and cook for another 5 minutes.
  6. Serve warm with pap and enjoy.
