INGREDIENTS

  • Delights
  • Lucky Star Pilchards in Tomato Sauce 1 can (400 g)
  • Large potato, peeled & cooked until soft & mashed 1
  • Large carrot, peeled & cooked until soft & mashed 1
  • Large onions, finely chopped & fried until cooked 2
  • Garlic clove, finely chopped 1
  • Large eggs, lightly beaten 5
  • Self-raising fl our 1 cup (250 ml)
  • Breadcrumbs 1 cup (250 ml)
  • Tomato paste 50 g
  • Sugar 3 Tbsp (45 ml)
  • Curry powder 1 Tbsp (15 ml)
  • Ground Tumeric 1 tsp (5 ml)
  • Steak and chops seasoning 1 Tbsp (15 ml)
  • Cayenne pepper 1 tsp (5 ml)
  • Tomato sauce 2 Tbsp (30 ml)
  • Worcestershire sauce 2 Tbsp (30 ml)
  • Coriander, chopped 2 Tbsp (30 ml)
  • Cooking oil for frying 2 Tbsp (30 ml)
  • Salt and pepper to taste
  • Fish Sauce
  • The sauce from the drained fish
  • Cooking oil 1⁄4 cup (60 ml)
  • Vegetable stock or water 1⁄4 cup (60 ml)
  • Basil Sauce
  • Fresh basil leaves 1 handful
  • Olive oil 2 Tbsp (30 ml)

METHOD

  1. Delights:
  2. In a medium bowl roughly cut the drained fish (keep the sauce aside) and combine with all the ingredients, adjust the seasoning with salt and pepper.
  3. Cover with cling wrap and refrigerate for at least 2 hours, or overnight. Heat 2 tablespoons of cooking oil in a shallow frying pan.
  4. Place a spoonful of the mixture in the oil and fry them on both sides until golden brown.
  5. Drain excess oil on kitchen towel.
  6. Fish Sauce:
  7. Mix everything and heat sauce on moderate heat and boil for a minute.
  8. Remove from heat and keep aside.
  9. Basil Sauce:
  10. Blend everything until smooth and set aside.
  11. Roasted Vegetables:
  12. Preheat the oven to 200°C.
  13. Grease an ovenproof dish and place the vegetables inside.
  14. Season lightly with salt and pepper and drizzle with olive oil.
  15. Bake for 20 - 25 minutes or until cooked and crispy.
  16. Remove from heat and set aside.
  17. To Plate:
  18. Pour some of the fish sauce in the middle of the plate.
  19. Just splash a teaspoon or two of the basil sauce on the fish sauce for colour.
  20. Arrange the roasted vegetables in the middle of the sauce.
  21. Place the Lucky Star Delight on top of the vegetables. Garnish and serve with a salad.
